Serendipitous Pie Cookies

Serendipity. It results in penicillin, microwaves and velcro. Or, you take hand pies and end up with serendipitous pie cookies!

So, once upon a time, on pi day (yes, this pi day), I wanted to make hand pies like these ones. One of my friends had the perfect molds for them. I had enough left over pie filling to make them. But when my friend was assembling them, something went awfully and terribly . . . right, actually.

Our pie crust was too cold to fold nicely and the future hand pies broke in pieces. Their lightly crushed berry insides lay strewn on the counter-top. Berry juice, strongly resembling blood, covered my friends hands. The remains were rolled in frustration and thrown in the oven, hoping for the best.

And thus pie cookies were born. Serendipity exists.

Different topic, the new camera is here! I’ve been playing around with it, figuring out how it works and just generally getting better at using it.

Starting and growing a blog throws into an ocean ocean that you’re not always sure how to navigate. You develop skills that you never thought you’d need and that you’re so glad to learn. You also develop skills that you never thought you’d need and that you wish you didn’t have to learn 😉 . But that’s the way of things.

One of the skills I’m developing is the ability to take a great picture. My results are pretty hit and miss right now. But you know what? They’re getting better. A lot better. As in, I never thought that I was capable of taking pictures these good. And they’ll continue to get better with time.

That’s part of what I learned in drum corps. Perfection is a moving target because we’re developing creatures. At the beginning of anything, you have one idea of perfection that you aim for. A little down the road, your idea of perfection is completely different. And once you’ve got enough experience, you may realize that you were right at the beginning or middle. Or you may realize that you’ve been wrong altogether.

But that’s just being human. Anyway, that’s enough philosophy for now. Enjoy the recipe and come cook with me again!

Serendipitous Pie Cookies

Prep time:  10 mins
Cook time:  15 mins
Total time:  25 mins
Serves: Many
 
Ingredients
Cookie Dough
  • 1 stick butter (chopped up into tiny pieces)
  • 2.5 cups gluten-free flour mix
  • 8 tsp ice water
  • 1 tsp salt
  • 2 tbsp sweetener of your choice (I like it without the sweetener, but some may choose a sugar substitute)
Berry mixture
  • 12 oz. blueberries
  • 12 oz. raspberries
  • 12 oz. blackberries
  • ½ tbsp. lemon extract or lemon rind (I prefer lemon rind)
  • ½ cup honey
Instructions
Cookie Dough
  1. Place all ingredients (except the ice water) into a food processor
  2. Blend together until the pie reaches a smooth and somewhat creamy consistency
  3. Add in ice water 1 tsp at a time, blending between each teaspoon
Berry Mixture
  1. Mix all ingredients together in a bowl
Cookies
  1. Preheat oven to 400 degrees Fahrenheit
  2. Spray non-stick spray on cookie sheet
  3. Roll cookie dough and berry mixture together
  4. Space evenly on cookie sheet
  5. Bake for 10 to 25 minutes, depending on your altitude and moisture in the dough -- crust should be golden brown but not burnt.
  6. Enjoy!

    HI! I got ths one, & I thnk one other – they went to my junk mal, am tryng to get them to go straght to my nbox. These cookes look a lttle … well done. :/ But you used GF flour! :) Lookng forward to more posts!

      They were actually stll pretty soft and gooey! I’ll see what I can do n the future for some ultra soft ones. Just for you 😉
