Good ‘ole St. Patrick’s Day. Somehow I always forget to wear green on you. But you are a fun hoiday. So fun that I decided to make some green pizza-nachos to commemorate everyone’s favorite Irish festival!
I love piling things mile high on pizzas. Maybe it’s from my time in Brazil. Or maybe I just like food. But either way, piling things on pizzas is awesome. Second only to piling things on nachos. I should make those in the future . . .
But that’s what I did with this pizza. I took a huge amount of everything and threw it on top. Chicken, olives, cheese galore (because cheese is amazing), mushrooms and grape tomatoes on top of a broccoli-spinach crust. The original recipe for the crust comes from A Tasty Love Story. I’ve changed it to suit what I had available, but the original is definitely worth checking out!
You know, serendipity is playing a large role in my cooking recently. Last time it was serendipitous pie cookies, this time it’s a crust that doesn’t quite turn out the way that I’d intended. Far from the crispy crust that I’d envisioned, this crust turned out to be little extra crumbly. I had intended a real pizza, but it kind of wasn’t.
But it turned out awesome.
Why?
Because green pizza-nachos, that’s why. Nothing could be better than that.
In other news, the site design is all new and changed. I wanted a more professional look and did a bit of work and shopping to achieve that. I’m doing all that I can to make this the best that it can possibly be. Performing is my passion and I want to perform in the best way possible for each of you. - 1 large broccoli head
- 2 onions
- 4 cloves of garlic
- 3 eggs
- 1 tsp salt
- ¾ cup whole wheat flour
- 4 portabello mushrooms, sliced
- 3 cups parmesan cheese, shredded
- 1 chicken breast, diced
- 12 grape tomatoes, cut in half
- 6 oz. olives, sliced
- 4 artichoke hearts, separated
- Combine all crust ingredients in food processor
- Pulse until fine
- Either pour into pizza mold or put onto greased baking sheet
- Bake at 400 for 15 minutes
- Take out of oven
- Brown chicken
- Place all ingredients on top of pizza crust
- Bake for an additional 15 minutes (25 if you want a very crispy crust)
