Simple is good. Simple is classic. And in most things, I really prefer simple. Simple is best in suits. In shirts. In pizza. In chicken alfredo. In a lot of stuff. But this Cinnamon Chocolate Chip Coconut Banana Bread is anything but simple. And while I normally loathe banana bread with equal parts zeal and irrationality, this recipe IS AMAZING.
I’ve loved bread since I was a little kid. I REALLY loved zucchini bread (which is interesting because I hated zucchini in literally everything else). When I first tasted pumpkin bread, I’m pretty sure that my pupils dilated and I felt something akin to love. Or maybe that was the sugar giving me an upset stomach. Love and upset stomachs are pretty much the same thing anyway, right?
Anywho, my love affair with bread aside, I’ve never really liked banana bread. I would have gone to my grave swearing up and down that banana bread was one of the most evil foods on the planet, second only to peas. Evil awful peas (I’ve since made peace with peas and now quite like them).
Fast forward to this past Saturday. I was trying to decide what to make my sister for her birthday. After great deliberation, I decided that, despite it’s intrinsically diabolical nature, banana bread was the right decision.
I modified a recipe from one of my all-time favorite cook books and baked the bread.
But then something odd happened. I smelled the bread and realized that it actually smelled really good. So good that I decided to sneak a piece, even though this was my sister’s birthday present.
Guys, this banana bread is not evil.
It was like a birthday food explosion in my mouth. It was a moment so happy that I can only compare it to being 5 years old and seeing the Death Star blown up for the first time. It was as good as my cinnamon chocolate banana pizza. Maybe even better.
The cinnamon and coconut together make this bread something special. It uses quite a few bananas, so just make sure to have a bunch on hand. You should make sure that the bananas are ripe enough to be used in banana bread, too.

- 5 very ripe bananas
- 5 oz. cinnamon chips
- 5 oz. chocolate chips (or 2-3 tablespoons cinnamon powder. You may use less if you choose, but I like mine VERY cinnamony!)
- 1 cup shredded coconut
- 1 tsp salt
- 1 tsp vanilla
- ¾ cups sugar
- 1½ teaspoons baking powder
- 2 eggs
- 8 tablespoons butter
- 1½ cups white flour
- ½ cup whole wheat flour
- Pre-heat oven to 350
- Place all dry ingredients together and mix well
- Mash bananas with a fork
- Combine bananas with wet ingredients
- Combine wet and dry ingredients
- Place into bread pan
- Bake for about an hour (or until toothpick inserted into the center is relatively clean after taking out of the bread)
- Enjoy!

Not a fan of banana bread or peas?!? Two of the best things ever, as far as I’m concerned! The only thing I disliked growing up, however was liver, so…you might say I like just about everything. I think you may have left out a step? There isn’t instruction on adding the wet ingredients. Keep ’em coming! Even if I can’t make these right now, I enjoy your posts and the pictures are purely drool-worthy! Wish I had smell-o-mac! I’d really like to get a whiff of this bread!

Absolutely! I’ll add this to the recipe, but you’ll use roughly 2-3 tablespoons of cinnamon powder. You can adjust as necessary, but I like mine VERY cinnamony 🙂

If I don’t have wheat flour can I use all white flour?

White flour and whole wheat flour interact with liquids a little bit differently and have slightly different tastes. Having not tried it myself, I’m not sure how it would turn out, but it couldn’t hurt to give it a try and let us know what happens!

Does the bread pan need prepped? One picture looks like it has been greased and floured.

Yes, the pan must be prepared or the loaf will stick to the pan when you’re trying to take it out. Great question!

An absolutely delicious banana bread with all that is promised! I used 4 very large, overly ripe bananas which did not prove to be 2 1/3 cups, so I added just enough sour cream to make up the difference. I also added 1/4 cup of chopped pecans to the mix. The end result was fabulous! I knew with all these reviews, I couldn’t go wrong ; ) Thanks for the lovely banana bread, Shelley~by the sea!

Had some bananas I needed to do something with. Decided on this recipe and I’m glad I did. It was quick and easy. I have also made Best Ever Banana Cake With Cream Cheese Frosting and it’s really really good as well, just a bit more time consuming. I’m sure I’ll make this one again. Thanks!
