Who DOESN’T love pumpkin bread (especially with so much deliciousness heaped on top!)??? The ginger in the bread brightens up the entire taste and the chocolate gives it a decadence that you need to taste to believe. #tryingsohardnottobeafoodsnob #whoamikidding
But seriously guys. Walnut ginger chocolate pumpkin bread. Mark my words. It’s a thing.
This pumpkin bread is a quick bread, which means exactly what you think it means. It’s quick! Just make sure that you do everything by hand (no food processor for this recipe!). Even better, getting things too smooth or silky will kill the taste of this recipe — everything will get tough and chewy. What does that mean? It means, super awesomely, that you only have to do minimal work to mix the ingredients. More than minimal work will result in less-than-desirable bread.
Like I said, this recipe is the easiest thing in the entire world. Seriously. There’s no kneading, there’s no waiting to rise, there’s no nothing that’s time consuming or even remotely difficult. So I’m not really going to spend much time on it. Have fun with it when you cook it. It’s the perfect recipe for quick baking on a cold Fall day.
Which I guess brings me to my main thought.
COOKING AND BAKING IS SO MUCH FUN GUYS! It’s true that I adore fancy food. I adore herbing my pasta and my olive oil and just about anything that can be herbed. I adore making everything straight from scratch and I adore taking pride in my work.
But most of all, I adore the fun of it all. Because of the fun, I’ve gotten faster, better and constantly grown to enjoy cooking more and more and more. And that’s so key.
Every human being has the ability to be fantastic at something. And it’s true that we’ll always have things that we need to do that aren’t particularly fun. But if we can find a career or hobby that’s so fun to us that it makes us forget the rest of the world, we’ll eventually get good at it. Pretty great, really. For me it’s cooking. I’m here to help it be cooking for you as well! But whatever it is, get out and do it!

- 1.5 cups pumpkin
- 1 Tbsp (or tsp, depending on your personal taste) ginger
- 2 cups flour
- 4 Tbsp butter
- 1 cup sugar
- 1.5 tsp baking soda
- .5 tsp baking powder
- 1 tsp salt
- 1 cup whole milk
- 1 egg
- ¾ cup walnuts
- 1 cup chocolate chips
- Preheat oven to 350 -- as always, make sure that you use your oven thermometer to ensure the correct temperature
- Combine and mix all of the dry ingredients
- Then combine the butter with the dry ingredients. You will want to add it in very small amounts so that you are able to have no chunks of butter larger than a pin head. This will require a little bit of elbow grease and that's OK. Sound tough? Maybe a little -- but the result is beyond worth it.
- Beat together wet ingredients
- Combine wet and dry ingredients -- do not do any more work than is necessary to get all of the dry team wet. This part's a snap!
- Bake for roughly 45 minutes to an hour. Your sense of smell should guide you here. Alternately, you can put a toothpick in the bread and see if it drags any of the mixture out when you remove it. If it does, you need to bake longer. If it doesn't, then that bread should be ready to consume. Always use caution when baking.
