Looking to add a bit of meat to your salads? Looking for an appropriate sauce for your pizza? I know the feeling! I was making my meat lovers pizza (which was a major hit, by the way) and I realized that I wanted a meaty “sauce”. And I decided that a vinaigrette was the right way to go! And what’s better, this vinaigrette goes on salads, in mashed potatoes, in everything! So get your aprons on and let’s put that pork to good use!
At its core, vinaigrette is a simple combination of oil and acid (usually in the form of vinegar). The ratio of that oil to the acid hovers at around the same point, and whatever else you put in is up to you. You want to make honey mustard? You want to make something garlicky? Something fruity? It’s all doable with vinaigrette. It’s a perfect DIY food.
This bacon vinaigrette is so simple that it needs only one tip: make sure that you cook the bacon thoroughly. You don’t have to burn it, in fact you shouldn’t, but you should take care to cook it properly. You want flavorful, crispy bacon here, not some soggy undercooked mess.
In other news, I was in the Macy’s Thanksgiving Day parade with the Madison Scouts Drum & Bugle Corps yesterday! It’s been a VERY busy week because of that, but it was more than worth it. In fact, I was on TV! You can see all 5 seconds of my airtime here. That guy at around 1:18? Yep. That’s me! And for your viewing pleasure, our Green Carpet performance. As the last unit of the parade, we introduced Santa Claus!
It’s an experience that I will never forget. Hundreds of people are owed fantastic thank yous for allowing myself and my fellow Madison Scouts alumni the chance to participate. And a giant thanks to those who were along the parade route and participated as the best parade audience that I have ever witnessed!

- 4 oz. bacon
- ¼ cup bacon fat
- ½ cup olive oil
- 5 Tbsp vinegar of your choosing (I use red wine vinegar, but the impact isn't tremendous)
- Cook bacon
- Combine bacon and bacon fat with the olive oil in a blender
- Add vinegar
- Blend until smooth
