Sauces make food taste fantastic. Quite a few of them (*cough cough* french sauces *cough cough*) are intimidating. But not the 3 minute greek yogurt chipotle sauce! It takes roughly 2 minutes to prepare it and 1 minute to make it. 3 minutes from start to delicious finish. No matter your skill level, you can make your dinner even more delicious with this sauce. And your taste buds will thank you. So grab that greek yogurt, pick up some ground chipotle and let’s get saucy!
Sauces can be thick, runny, or in between. Using whole milk yogurt for this particular sauce gives you complete control over just how thick or thin you’d like for this 3 minute greek yogurt sauce to turn out. Why? The fat content. Fat is what makes this particular sauce thick. Start with whole milk yogurt, and every option from creamy to runny is yours for the taking. Start with something like skim milk yogurt, and liquidy and runny is your only option. Think of it like a haircut. You can always cut more off, but you can’t put it back on after the barber has snipped it off. You can always thin whole milk, but it’s a whole process to thicken skim or 1 percent.
No matter the milk you choose, the whole process still takes only just a few minutes. For those of you that live and die by how quickly you can make your food, this one is for you. Especially if you have a food processor. Now, I’m not a guy who preaches that faster food is the better food. I enjoy the process and result of things that take time to make. Being in the kitchen while friends joke and music plays, smells wafting from the stove, an almost artistic mess resulting from the food prep — it’s fantastic.
But you might need something fast, especially when you’re getting it to the table after a hard day and kids are screaming. And that’s why I publish quick recipes, too. It’s also nice that this 3 minute greek yogurt sauce can be customized to exactly your liking. Don’t like the chipotle? Toss in something different, and nearly every time, this sauce will still turn out fantastically. Fast and done the way you like.

In case you didn’t read it in my last post — I’m a procrastinator. I’m working on it. So here’s my update on procrastination: I haven’t done quite as well the last few days, mostly becuse I’ve stopped using the technique that I described in my previous post. And isn’t that how it always goes? You search and scour for a way to overcome your problems, and when you find one that’s small and simple, you try it, it works, and you love it! For like a week. And then you just slowly give up on it without even realizing. I firmly believe that if we really make those small and simple things habits, great changes will result.
I learned that in the Jersey Surf Drum & Bugle Corps. We had an instructor who would always ask us one question: Why do you need an invitation to be great? None of us needs an invitation to be great. So take whatever small and simple habits you’ve decided to include in your life since the new year and use them! I’ll report back more next week.
In the meantime, enjoy this sauce! It’s small and simple, too!
- 2 cups whole milk greek yogurt
- Juice of ½ a lime (roughly ½ Tbsp -- use more if you like your sauce thin, but no more than 2.5 Tbsp)
- Chipotle seasoning to taste (because everybody likes a different amount of spicy!)
- Place whole milk greek yogurt into processor bowl along with chipotle seasoning
- With the machine running, slowly introduce the lime juice through the feed tube
- Voilà! You're done
- Place yogurt and chipotle into a bowl. Make sure that the bowl is big enough for you to whisk the yogurt effectively.
- While whisking the yogurt and chipotle together, slowly introduce the lime juice, drop by drop and getting faster towards the end.
