Homemade pizza. Just thinking the phrase makes me hungry. It makes me dream of a world where world peace is brought through giant pizza parties. I like to think that something like this pizza dough would be part of that process. Bacon, chives and cornmeal take a normal pizza dough and turn it into something special. And because I’m oh so imaginative, I call it my bacon chive pizza dough.
The bacon in the dough gives it a lightly salty flavor and the chives give it an almost onion-y/garlic-y flavor. The cornmeal gives the dough a bit of extra pep and crunch. I favor a food processor when I make this recipe, but you technically don’t NEED one. Still, it makes the prep much quicker and much more enjoyable.
Another great thing about this recipe is the fresh cracked peppercorn and the sea salt. Seriously. Store-bought pizza dough (or pizza for that matter) will never taste the same.
When I was little, I thought that pizzas were made only by special machines sent to us by the great pizza gods on high. I assumed that it would be unthinkable to even try to bake pizza at home. Pizza pirates would come and savage you if you did. As cool as that would be, it’s way cooler that you can make it at home.
I know that I wasn’t the only person who thought that way. There’s so much to be missed by that kind of thinking! Most affordable chains, if not all, don’t produce truly flavorful food. And even when it has flavor, it doesn’t necessarily taste good or the way that you want it to.
Some people think that canned olives grow on trees! No joke. I’ve met them. Not everyone is that extreme, but there are so many people who miss so much of the fresh, homemade and non-processed food that’s available. And it’s a tragedy.
Because real food is fun.
Real food is fun to make, it’s fun to eat and it’s fun to share. Real food is taste, it’s smell, and it’s good feelings. Learning to cook opens up worlds of possibilities. It makes weight loss so much more accessible. It makes living well on a budget so much more fun. It makes life a better place.
And, most importantly, real food is cooking.
If you don’t cook it yourself, you miss out on so much that real food has to offer. Making an entire recipe from the ground up is, I imagine, better than riding a lightsaber broomstick in space.
But anyway, MAKE THIS PIZZA DOUGH! I COMMAND YOU BY THE AUTHORITY OF THE PIZZA GODS! Or else pizza pirates will give you scurvy. And you don’t want scurvy.
- 3 cups all-purpose flour
- 2 teaspoons yeast
- 2 teaspoons salt (not table salt -- sea salt is my preferred)
- 2 teaspoons extra virgin olive oil
- 4 strips bacon, cooked and crumbled
- 2 oz. fresh chives
- ½ tablespoon rosemary leaves (you may grind if you so desire)
- 2 teaspoons lemon zest
- Combine ingredients in food processor
- Turn on and pour in 1 cup water (the mixture should be quite sticky, but not excessively so)
- Work dough on floured surface and let sit for 2 hours
- Freeze or use
