I love bears. Know why? BECAUSE I LOVE HONEY. AND BEARS LOVE HONEY. HOOOONNNNNEEEEEYYYYYYY! Ahem. Annnnnyway, honey is pretty great. A food that lasts practically forever, a freaking amazing sweetener and basically the tastiest thing this side of cheese. Vinaigrette is seriously versatile, making it the perfect DIY food. You can make it for pizza, salads, glazes and all-around deliciousness. So let’s check out my absolutely. delicious. Honey mustard vinaigrette. As soon as I eat just a bit more of it.

Ok. Back. So this stuff is pretty easy to make. Let’s take a look at the one tricky part about it. Adding the oil. There are two ways that you can do this. The first is using a nice food processor or a blender. Most nicer food processors come with tools that slowly drip oil into a mixture, which’ll allow you to get a beautiful emulsification in a minute or two. Blenders also work, though, with very little real difference between end products. You’ll get the same consistency that you’ve always expected from store bought vinaigrette with a flavor that rivals a mythical animal. The other option is to do it by hand with a fork or a whisk. As Mark Bittman notes in How to Cook Everything Doing it by hand isn’t going to make something with the same consistency that people are used to. So if that’s not upsetting to you or if it doesn’t go against what you ultimately want, feel free to do it that way. Just know that everything is going to separate quite a bit over the course of an hour (perhaps a few hours if you really pour some energy into it).
Just like most of the foods I post here, this is a PERFECT DIY food. To bring out the taste of the honey and the mustard, I use two cloves of garlic. You’ll barely taste it (unless you toast some bread with this vinaigrette — truly delicious!) and it’ll make EVERYTHING taste sooooo much better. Just be sure to mince and press the garlic before you use it. And there you have it!
- ½ cup olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp ground mustard
- 1 clove garlic, minced
- 2 Tbsp honey
- Mince garlic, combine with ground mustard
- Combine with honey and vinegar in either a food processor or blender
- Pulse 2-3 times
- With the blender on, gently (and SLOWLY!) pour in the olive oil. Too fast and your product will not emulsify properly.
