Ah, mayo, godsend of the great American sandwich! Once upon a time, it was the king of condiments, but recently it’s been adulterated by people less interested in food than they are in profit, made with subpar techniques and with less taste than grass. Real mayonnaise is made with hearty egg yolk, beautiful oil and mouthwatering spices and herbs. And this mayonnaise, my friends is real mayo. Real mayo that, once you learn the recipe, you can flavor how you want, use how you want, and you can use to escape the sad mayo peddled to you at every corner. So come hither, and let’s take a look at beautiful chipotle mayo!
What’s In It?
Egg yolk and oil are the two essential ingredients, and herbs and spices bring their own flavors as you wish. Now, a disclaimer: this recipe uses raw eggs. Raw eggs can carry disease. You should proceed with this recipe at your own risk. Take precautions to use only high quality eggs, and be aware that even with the best eggs, you still take a chance when you make this recipe. Also be aware that the mayo will have a yellow color.
Moving on.
This is a flavorful and versatile dish. And you can add anything you want to it to change the flavor. Want to make rosemary mayo? Add some rosemary! Want a chive mayo? Add chives!

Anything Hard?
Kind of. Mayo is an emulsion. That means that you force oil to combine permanently with another liquid. You can do this by hand or by machine (which is far easier), but either way, it isn’t particularly difficult.
Emulsions are created by slowwwwwwwwwwwwwwwwwly adding oil to the other ingredients in the mayo. While not entirely necessary, you should probably start by adding the oil one drop at a time, especially if this is your first time making mayo. Other than that, there’s nothing particularly difficult about making mayo.
Anything Else?
Remember that what you put in this mayo is up to you. I like this recipe. It’s got a great kick and it goes fantastically on my wildly popular Philly cheesesteaks. But the reality is that you can swap out the ingredients of this recipe to make any number of variations. Use rosemary or garlic or any number of spices to create a mayo that’s all your own and just for you.
And that’s all there is to it! Make it the way that you want it and enjoy it! Making a fancy special mayo just because you can is kind of awesome. It makes me feel totally awesome whenever I do it. And keep ready for the upcoming Mormon Food Guy Christmas menu!
- 2 cups extra virgin olive oil (you can also use any other oil with a neutral flavor)
- 2 egg yolk
- 1 Tbsp dijon mustard
- 1 Tbsp chipotle seasoning
- 2 tsp crushed red pepper
- Salt and pepper to taste
- 2 Tbsp of a really good vinegar
- Put the mixture into a blender and start it.
- Here's the tricky part. Add the oil, potentially drop by drop at the beginning, but certainly very, very slowly until it's all mixed and you are left with an almost gooey, very thick mixture.
- Stir in vinegar.
- Enjoy!
