Some foods are just unfair. They entice you with their smell, their appearance, their essence. For me, bread is a food like that. For me (and probably many of you) chocolate is another food like that. So what happens when you put the two together? Gooey, exuberant tastification. Want proof? I got proof. I featured an apple brioche recipe recently. Why so much brioche? For one thing, my recipe makes two loaves. But for another matter, brioche is perfect for 2 of my favorite things: sandwiches and french toast. The firmness and texture of brioche are ideal for a sandwich. It won’t break apart when you slice it and it participates in the sandwich without overpowering it. As for french toast: nothing screams sinfully, licentiously tasty like brioche french toast. It even rhymes!

Another nice thing about brioche? It’s super duper easy to customize. Just like I noted in the the apple brioche recipe, bread like this isn’t just fun, it’s empowering.

In other news, I was reading this article from Art of Manliness on gratitude and it got me thinking about gratitude. For a long time, I always thought of people who “practiced gratitude” as people who didn’t want to admit that they could be doing better in life. Until I lived in Brazil. The people there completely changed my perspective on the issue of gratitude.
So many Brazilians who are well off and poor alike are genuinely grateful for their families, beautiful land and so much more. Gratitude for them isn’t a practice, it’s a natural response from the heart. It fuels them to take good care of what they have and to share with those around them. It’s an indispensable part of their lives.
Authentic gratitude isn’t just a refuge of happiness in the face of adversity, it’s a fuel for improvement.
So be grateful for this chocolate brioche recipe! 😉 It really is simple as simple can be, and you can customize it how you will. It’s the perfect bread for so much. You’ll believe me the second that you try it!
- 6 oz. dark chocolate
- 4 cups all-purpose flour
- 1 Tbsp cinnamon
- 1 tsp salt
- ¼ cup sugar
- 1½ tsp yeast
- 1 stick cold butter (you'll cut the butter into pieces. The pieces should be fairly tiny)
- 3 eggs
- ½ cup milk
- *Brushing mixture*
- 2 Tbsp milk
- 1 egg yolk
- Combine all dry ingredients (minus the butter and processed apple) in food processor
- Process for around a minute or so, pouring in chopped (or processed) chocolate, milk and ⅓ cup of water as you process (the dough will be super-duper ultra sticky -- dry flour is not what you want)
- Let the dough sit (covered) for roughly 2.5 hours
- Place in bread pans and cover for another hour
- Preheat oven to 400 degrees
- Brush tops of bread with brushing mixture
- Bake for 30 minutes. You may bake for just a few more minutes if you need to, but be careful -- you don't want the bread to dry out!
